Britt’s Bacon Bison Burger

Serves: 4 people or 2 burgers for 2 people
So, Jeremy and I were feeling exceptionally lazy last Wednesday and really did NOT feel like cooking a big long meal. We both had a million things going on, not to mention a newborn who rules the house right now. Needless to say, free time was and is precious and limited. These yummy burgers were the perfect solution to a time-crunched evening.
1 1/2 lbs of ground bison
1 teaspoon of minced garlic
1/2 cup of chopped onion
2 teaspoons of Trader Joe’s Brand 21 Seasoning Salute
8 strips of uncured bacon ( 2 strips for each burger)
2 shavings of swiss cheese ( used a carrot peeler) * cheese optional
Organic stone ground dijon mustard
1 cup Spinach Spring mix
I used two skillets for this recipe: One for the burger and the other for the bacon strips. I recommend frying the bacon and cook the burgers at the same time.
In a medium bowl, mix and mold your ground bison with your garlic, chopped onions, and seasonings. Mold your burger meat into 4 patties. With a few tablespoons of olive oil in your skillet, cook for 5-7 minutes on each side until desired doneness. The last minute of cooking your burgers, add your thin shavings of swiss cheese and cover with lid to melt.
Take your plate and arrange your spinach leaves on the bottom. Add your bacon and burger on top and finish with a spread of dijon mustard.
